Main Goal of Lalola
We are focused on producing exquisite homemade Croquettes, following a handcraft manner, respecting authentic Spanish culinary tradition, keeping a competitive prices and ensuring a consistent quality.
To achieve these goals five key pillars are fundamental to our business:
- Meticulous Ingredient Selection: We consider essential to audit all our suppliers factory and analyse all their processes before acquiring any material. We meticulously check every ingredient, confirming the product quality (flavour, texture, aroma and appearance) meets our strict requirements and that their production procedures accomplish our needs. We only work with suppliers who are focused on producing 1st class products.
- Semi-artisanal Production Process: By mixing both processes, artisanal and industrial, guaranties a constant quality level as well as a “hand-made” look and feel for all of our products.
- Temperature Control: All of our products follow a rigorous temperature control process. All freezing procedures are carried out using a specialised ultra high speed freezing machinery. This allows us to reduce production times to a minimum, whilst ensuring excellent flavour, aroma and texture identical to a freshly made Croquette.
- Hazard Analysis & Critical Control Points: HACCP is the management system implemented in Lalola which follows a methodology in which food safety is addressed through the analysis and control of biological, chemical, and physical hazards from raw material production, procurement and handling, to manufacturing, distribution and consumption of the finished product.
